To create homemade ice cream, make sure all of the components are chilled. That means you should make the heavy cream combination a few hours before creating the ice cream, otherwise you will have to put it in the freezer to chill it down.

Homemade Bourbon Apple Pie Ice Cream is a delectable apple pie ice cream with a sweet cinnamon bourbon filling. This handmade ice cream recipe is unrivaled!


For the filling

  • 34 Medium apples, sliced
  • 1 Lemon, juiced
  • 2 tbsp Light brown sugar
  • 2 tbsp All-purpose flour
  • 2 tbsp Maple syrup
  • 1 tbsp Bourbon
  • 2 tsp Cinnamon
  • 1 tsp Apple pie spice

For the ice cream base

  • 3 C Heavy whipping cream
  • 1/2 C Sugar
  • 1/4 C Light Brown sugar
  • 2 tbsp Maple syrup
  • 1 tbsp Bourbon
  • 1 tsp Cinnamon
  • 1 C Walnuts, crushed


  1. Freeze the ice cream maker according to the manufacturer’s directions.
  2. Squeeze a lemon over top and whisk to blend after slicing the apples into tiny pieces.
  3. Over the apples, sprinkle brown sugar, flour, maple syrup, cinnamon, and apple pie spice. To combine the components, stir them together.
  4. Cook the apples over medium heat for 15-20 minutes, or until tender. Stir every now and again. Instead of bigger bits, you want the apples to be mushy, like apple sauce. Set aside to cool entirely, then refrigerate if required.
  5. Combine 2 cups heavy cream, sugar, brown sugar, maple syrup, whiskey, and cinnamon in a medium sauce pan. Stir for 2-3 minutes, or until the mixture reaches a boil.
  6. Remove from the heat and fold in the remaining 1 cup heavy whipping cream.
  7. Refrigerate the mixture until it is absolutely cool. If the mixture becomes somewhat stiff, it may be warmed until liquid again forms. Return to the freezer to quickly cool.
  8. Before adding the liquid, start your ice cream machine. Pour in the liquid gently and churn on low for 10 minutes, or until the custard begins to form. Increase the speed and churn for 5 minutes more. Pour the ice cream over the broken apple pie filling. Half of the crushed walnuts should be added.
  9. Stop the mixer after the mixture has achieved custard consistency and scoop into a freezer-safe container. Finish with the remaining walnuts.
  10. Freeze for 4-6 hours.


The prep and total time include the time it takes to pre-freeze your ice cream machine.
