I won’t bore you with my thoughts on the Super Bowl since I am not a fan of any team, particularly the Broncos. Although I appreciate playoff and championship games, I am not a typical football fan. Unless, of course, there is food involved. Yesterday, I cheated on my diet by eating pizza. It was fantastic. And now that the Super Bowl is over, we can go back to our regular Sunday evenings, which feature episodes of The Walking Dead.
I wish I’d had some of this Cake Batter Monster Cookie Cake to wash down the pizza. It’s a massive cookie cake packed with cake batter, M&Ms, and sprinkles. You may recall this since I made Cake Batter Monster Cookie Sandwiches before. I modified the recipe to suit this cake.
This cake has a lot to appreciate about it. First, there’s the cake batter. I substituted dry cake mix for the flour. Then I added chocolate chips and M&Ms, as well as a few sprinkles. Sprinkles are required in every cake batter. And, of course, no cake would be complete without some icing.
I bake cookie cakes in a 9-inch Springform Pan pan to make it easier to remove the sides. If you don’t have a springform pan, a 9-inch pan will do. I recommend lining it with tin foil or parchment paper to make it easier to remove the cookie cake. Of course, some Crisco is always welcome.
I can assure you that after three tries at making this cake, I have the ideal recipe. I cut the quantity of batter in half so you don’t have to overbake it. I also suggest covering the top with tin foil for the final 10 minutes of baking to keep the edges from browning. You can image what my colleagues must have thought when I went in on Monday morning with three of them.
I’ll take any opportunity to make cookie dough, but at least you won’t feel bad since one slice of this is better than a handful of cookies. That is, at least, what I tell myself.

Ingredients
- c unsalted butter
- c sugar
- 6 tbsp light brown sugar
- 1 large Eggs
- 2 tsp vanilla extract
- c flour
- c yellow cake mix, dry
- 1 c quick oats
- tsp salt
- tsp baking soda
- c mini chocolate chips
- c MnMs candies
- C sprinkles
- For the frosting
- c unsalted butter
- 2 c powdered sugar
- 1 tsp vanilla extract
- 1 tbsp milk
- Additional Sprinkles for garnish
Instructions
- Preheat oven to 350 F.
- Microwave butter for 10-15 seconds to soften. Combine the butter, light brown sugar, and granulated sugar. Mix until the mixture is nice and fluffy.
- Beat in the egg and vanilla essence until the egg is completely integrated.
- Combine the flour, dry cake mix, oats, salt, and baking soda in a separate basin. Slowly incorporate the flour mixture into the dough batter while mixing on low speed.
- When all of the flour has been added, raise the speed to medium and mix until dough forms. Mix in the small chocolate chips. Mix in the MnMs and sprinkles until well blended.
- Crisco or cooking spray a 9-inch spring form pan. Line the bottom of the pan with parchment paper or tin foil.
- Bake @ 350°F for 32-35 minutes. Cover the cookie cake with tin foil for the final 10 minutes of baking. Remove from oven and set aside to cool completely before removing the pan’s edge.
- For the frosting
- Allow around 30 minutes for the butter to soften. Alternatively, microwave for 10-15 seconds to soften.
- Whip the butter on medium speed with a paddle attachment until light and fluffy.
- 1 cup powdered sugar at a time, add slowly. Frosting will thicken. 1 tablespoon milk should be added after the powdered sugar has been added. Whip until the mixture is smooth. Pipe over the borders of the cake and top with extra sprinkles.
