As I write this, I am sitting by the lake, spending time with family and friends. Lake vacations are often a fantastic excuse to eat foods you wouldn’t ordinarily eat at home, sleep until 10 a.m., and sip some early afternoon drinks. Margaritas taste better near the lake. This week, we’re feeding a crowd, and our dinners and snacks are all about easy-to-prepare delectable goodies. Chocolate Cherry Monkey Bread Muffins are a delicious breakfast or after-dinner treat. Each muffin is prepared with filled chocolate and cherry biscuits that have been rolled in sugar and drizzled with chocolate.

These tear apart muffins are really simple to make, and there are several filling and topping options. I used a can of Lucky Leaf Cherry Pie filling, micro chocolate chips, and prepared cookie dough for this recipe.

I like to make the biscuit dough using a homestyle biscuit rather than a flaky biscuit. The dough is easy to handle. Let’s go through the process for making these muffins.

First, lay out the dough into a pancake form that is lovely and flat. You then cut it into quarters. To cut through the dough, I prefer to use a pizza cutter or something similar.

To fill the dough, dollop some of their cherry pie filling into each quarter and top with a few small chocolate chips. The next phase requires you to be fast and nimble.

To pinch the ends together, grab each corner and fold it in. The cherry juice will drip down the edges, but that’s OK. Simply take up each pouch, roll it in sugar, and set it in a greased muffin tray. It is better to bake with the pinched edges facing down or towards the sides of the pan so they do not burst apart.

Each muffin cup can hold 3-4 pouches. I like to use three pouches so that the muffins aren’t too huge. If you use three pouches for each muffin, you’ll get 11 muffins out of an 8-biscuit container. I’ve doubled this recipe to produce a bigger quantity. Because they are individual servings, making them in a muffin tin makes them ideal for a party.

enable the muffins to cool and set for fifteen minutes after they have finished cooking; this will enable the liquids to firm up and make them easier to remove from the pan. It’s also a good idea to run a knife along the edges.

Because chocolate makes everything better, I drizzled them with chocolate ganache. It’s just chocolate chips and butter that’s been melted in the microwave. I love to sprinkle the chocolate on top using a piping bag, although a spoon would do.

Chocolate Cherry Monkey Bread Muffins

Ingredients

  • 2 pkg Biscuits (home style) 16.8 oz
  • 1 can Lucky Leaf Cherry Pie filling
  • 1/2 C Mini chocolate chips
  • 1/4 C Granulated sugar
  • For the glaze:
  • 3 oz Chocolate chips
  • 3 tbsp Unsalted butter

Instructions

  1. Pre-heat oven to 350F. Grease muffin pan.
  2. Unroll the biscuits from the packet and roll each one until it is flattened like a pancake. Divide into quarters.
  3. Fill the middle of each quadrant with 2-3 cherries. Sprinkle a few small chocolate chips on top of the cherries.
  4. Pinch all four corners together to make a bag. Juices may be seeping from the sides, but that’s OK. Roll in granulated sugar gently.
  5. Fill each muffin cup with three cherry packets. If the sealed sides are not pointing down or outward, they will expand open during baking.
  6. Bake for 20 minutes at 350°F, or until the dough gets a light brown hue. Allow to cool for 15 minutes after removing from oven. Run a knife along the sides of the muffins to help them loosen from the pan.
  7. In a microwave-safe dish, combine chocolate chips and butter to make the glaze. Microwave for 30-60 seconds, or until the butter melts. Stir until the mixture is entirely smooth. If the chocolate is too thick, add more butter. Drizzle over the tops of the muffins.
  8. These are best served warm, but they may be kept in an airtight container for up to a day.

This recipe may easily be cut in half to yield 11 muffins.
