After creating my master muffin mix, I’ve gotten fairly fascinated with creating new muffin recipes using all of the wonderful fruits that are now in season. So I set out to develop a peach muffin that is so flavorful that you will want to make another batch as soon as you finish this one.
These muffins include peaches and macadamia nuts and are topped with a brown sugar macadamia nut crumble. You don’t want to miss out on them.
Peach Macadamia Nut Muffins

Description
These soft, tender muffins include luscious peaches and crunchy macadamia nuts. Very tasty!
Ingredients
In the case of the muffins
- 23 jumbo peaches
- 1 cup all-purpose flour2
- 4 teaspoon baking powder
- 1 teaspoon salt
- 1 cup of sugar
- 1 big egg
- 1 cup melted butter
- 1 tablespoon vanilla extract
- 1 cup of buttermilk
- 4 cup soured cream 1
- 2/3 cup macadamia nuts
Toppings in Streusel
- 3 tablespoons butter (at room temperature)
- 1 cup all-purpose flour4 C
- 2 tablespoons sugar
- 1 tablespoon of light brown sugar
- 1 pound macadamia nuts
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Grease your muffin pan generously with Crisco.
- Peaches should be washed and peeled. Make little dice, approximately the size of a cent.

- 4 cup flour with peaches and gently toss to coat. Set aside. Combine the 1
- Mix the remaining flour, baking powder, salt, and sugar in a mixing bowl. Set aside.
- Using a fork, beat the egg in a medium basin.
- Heat butter in microwave for 20-30 seconds until melted. Add melted butter to egg and stir to mix.
- To the eggs and butter, add the vanilla extract, buttermilk, and sour cream. Whip all wet ingredients together with a whisk until smooth.
- Add wet components to dry ingredients slowly, stirring with a wooden spoon. Just mix until mixed.
- Mix in the peaches and macadamia nuts.
- To make the streusel topping, mix the butter with all of the dry ingredients. Cut the butter into the dry ingredients using a pastry cutter or fork until no big lumps remain.
- Fill each muffin cup all the way to the top. Top with streusel topping.
- Bake at 400°F for 5 minutes. Reduce the oven temperature to 350 F after 5 minutes and bake for 15-18 minutes, or until the sides are golden brown. Check for doneness with a toothpick. Insert a toothpick into the middle of the muffin and remove it when it comes out clean.
