These No-Bake Butterscotch Bars combine salty and sweet flavors. Peanut butter, pretzels, butterscotch ganache, and salty cashews are layered together. These bars make an excellent snack!

Sometimes all you need to get through the day is a salty and sweet snack. Anyone anyone go hunting through your cabinets at 3 p.m. for a snack? Surprisingly, I find that if I am really busy, I nibble less often at work. Also, since I have to wash my teeth all the time now that I have Invisalign, I am selecting and choosing my meals carefully.

It’s especially difficult in my workplace because there are ALWAYS snacks, tempting sweets, birthdays, happy hours, and celebrations. It’s insane. And that doesn’t even include the dessert I bring after a long weekend of work on Mondays and Tuesdays.

These No-Bake Butterscotch Pretzel Bars made an appearance at our workplace recently at a baby shower. There’s a lot going on here, and it’s all fantastic. This dish was recently posted on the Better Homes & Gardens blog, Delish Dish.I didn’t make many changes to the original recipe since it was already delicious!

The crust on these bars is a delicious combination of peanut butter (yum! ), powdered sugar, butter, and pretzels. Using a rolling pin, I smashed the pretzels and mashed them into the crust. The original recipe called for a 9-inch by 13-inch pan, but I thought the crust would be too thin, so I used a 9-inch square pan instead. I strongly advise you to do the same!

A thick layer of butterscotch ganache, created with butterscotch chips and heavy whipping cream, sits on top of the salty crust. Pour it over the crust and then sprinkle with cashew pieces on top. I used cashews since they are more buttery than peanuts, but you may use any nut of your choice.

Because these bars need some time to set, I placed them in the refrigerator until the ganache was solid. Wrapping your pan with parchment paper makes it simpler to lift these bars out of the pan, slice them, and serve!
