It’s all about ice cream today. The basis for these Smores Ice Cream Sandwiches is a no-churn ice cream. It has everything you need for a smore: toasted marshmallows, chocolate, and graham crackers.I knew I had to include an ice cream dish in Smores week since this past Sunday was National Ice Cream Day!
The ice cream is prepared in your mixer, but no ice cream machine is required! It’s created with sweetened condensed milk, marshmallow cream, and a dash of Cool Whip. This ice cream hardens yet remains somewhat soft, making it the ideal consistency for biting into.
Melted chocolate lines the graham crackers. This is quite simple. It’s much better if you use a chocolate candy melt like Candiquik. The chocolate melts in the microwave in approximately a minute and is always smooth. Spoon the chocolate over the back of the graham crackers and carefully smooth out with the back of a spoon. Then you let it solidify. Make 15 full-size chocolate-covered graham crackers.
Let’s speak about marshmallows for a second. There includes marshmallow crme as well as toasted marshmallows. I softly melted the marshmallows in the microwave before torching them with a kitchen torch. However, I am aware that not everyone has a kitchen torch! The alternative option is to heat the marshmallows in the oven for a few minutes before adding them to the ice cream.
Here are a few tips to help you make this. Line your pan completely with tin foil, folding it over the sides. When you take them out of the freezer, you can pull the tin foil out of the pan and cut into them more easily. The bottom of the pan may hold 6 1/2 graham crackers. There will still be a couple of inches of open space on the pan’s side. I made a tin foil wall to push against the ice cream sandwiches to help them keep their form. It worked flawlessly.
You just pour the ice cream over the graham crackers and level it up. Then cover the top with the remaining graham crackers. The ice cream foundation takes a bit longer to firm, so prepare them the night before you want to serve them. They cut easily, allowing you to make each sandwich the size of half a graham cracker. Aren’t they adorable?

Ingredients
- 46 oz Melting chocolate
- 2 pkg Graham crackers
- 1 Jar Sweetened condensed milk (14oz)
- 1 Jar Marshmallow crme (7oz)
- 1 C Chocolate pieces
- 1 C Graham cracker crumbs
- 25 Large Marshmallows
- 1 C Cool Whip
Instructions
- Combine sweetened condensed milk and marshmallow cream in a mixing dish. Mix until smooth. Chop the chocolate into tiny pieces and add it to the mixing bowl.
- To get a fine crumb, crush crackers in a food processor. Combine in a mixing dish.
- Microwave marshmallows in a microwave-safe dish for 30-45 seconds, or until soft. To toast the marshmallows, use a kitchen torch. Toasted marshmallows should be placed in a mixing basin.
- Last, add the Cool Whip. Mix all of the ingredients together until smooth.
- Line the sides of a 913 pan with tin foil to make removal easier afterwards. Place as many graham crackers as will fit around the bottom of the pan, 6 whole crackers and 1 half cracker. One edge of the pan should be too small to accommodate a whole cracker. Create a wall out of tin foil in the vacant area.
- Spread the ice cream filling evenly into the pan. Line the top with the remaining graham crackers in the same pattern as the bottom.
- 6-8 hours in the freezer. Remove the pan from the freezer and carefully pull the tin foil out. Cut the ice cream sandwiches in half using a sharp knife. You should be able to get 15 ice cream sandwiches. Serve right away.
