What? Another dish for sweet potatoes? That’s correct! I told you I love sweet potatoes, and now I can’t get enough of them. First, I introduced you to my Sweet Potato Cake, and then I introduced you to my favorite Thanksgiving side dish, aMashed Sweet Potato Mallow. Oh, and don’t forget the ice cream! Today I have something very different.

These Maple Sweet Potato and Butternut Squash Puffs begin with roasted sweet potatoes and butternut squash in maple syrup and brown sugar. After roasting, they are baked in a muffin pan lined with puff pastry. After inverting, you’ll have a portable appetizer or side dish.

I am obsessed with making things simpler. So I went out and purchased pre-cut sweet potatoes and butternut squash. You may mix the items in a dish or a Ziploc bag. These have maple syrup, cinnamon, and a hint of nutmeg in them. I added some pecans at the last minute for a little crunch!

Raise your hand if you’ve never made puff pastry before. Is this me in the corner by myself? I’ve never used puff pastry before! I’m not sure why I felt nervous. For this recipe, I used frozen puff pastry. I just unfolded it when it had thawed and cut out the shapes I need. It was very simple!

I had enough for 12 muffin cups. This was plenty for a small gathering, since I served two to each individual. I had extra puff pastry and only used half of the sweet potatoes and butternut squash I purchased. It is very feasible to make this two nights in a row! If you want to make the full recipe, you should buy two boxes of puff pastry.

8 wide. You should cut it so that you can tuck the sides into the muffin tray and carefully smooth down the top. I also used an egg wash to give mine a little brown hue.To get a big enough circle, measure your circular cutter against the entrance of your muffin tin. 3 3 was the size of my cookie cutter.

One more thing. When they are done, they are quite puffy and seem to be detached from the filling. Allow them to cool somewhat. Place the sheet pan on top of the muffin pan. Secure the sheet pan to the muffin pan with two hands and flip it over. Lift the muffin pan gently. This will take the puffs out of the pan. The puff pastry has taken on the contours of the filling, making it simple to pull up and devour! I drizzled maple syrup on top and sprinkled cinnamon on top of mine.

This recipe was inspired by a holiday baking class I took at the Better Homes and Gardens Cooking Experience. I believe the puff pastry makes this an excellent appetizer or side dish. You may make the filling ahead of time, then cover it with puff pastry and lay it until shortly before serving. Season with your favorite autumn spices if desired. I had a couple of them to myself!

Ingredients

  • 1 box Frozen puff pastry
  • 3 C Sweet Potatoes, cubed
  • 3 C Butternut squash, cubed
  • 1 C Chopped pecans
  • 3 tbsp Maple syrup
  • 1 tbsp Brown sugar
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 Large Egg

Instructions

  1. Thaw puff pastry and refrigerate once thawed.
  2. Preheat oven to 400F.
  3. Precut sweet potatoes and butternut squash are ideal. Sweet potatoes, butternut squash, pecans, maple syrup, brown sugar, cinnamon, nutmeg, and salt should all be combined. To incorporate all of the ingredients, stir them together. Place on a baking sheet that has been lined with parchment paper.
  4. Roast for twenty minutes at 400F.
  5. Coat a muffin pan with cooking spray. Divide the contents equally among the muffin cups.
  6. Cutter number eight.On a lightly floured surface, unroll the thawed puff pastry. Calculate the size of the circle cutter required to cover the top of the muffin tray (plus a little more). A 3 3 was utilized.
  7. Fold the inflated pastry edges all the way around the muffin tray. Pat the top down gently. Whisk the egg and brush it gently over the puff pastry.
  8. Bake for 15-18 minutes, or until the puff pastry is golden brown and puffy.
  9. Allow at least 15 minutes to cool. Place the sheet pan on top of the muffin pan. Secure the sheet pan to the muffin pan with two hands and flip it over. Lift the muffin pan gently. This will take the puffs out of the pan. Drizzle with more maple syrup and cinnamon if desired.

Notes

Thaw the puff pastry ahead of time. Serve one or two puffs each guest. It is most convenient to use pre-cut sweet potatoes and squash. You’ll need one additional box of fluffy pastry to make the whole batch.
