Let me begin by stating that I am not sorry for presenting this over-the-top chocolate, maple, and bacon bliss because it is just the finest combo ever. Did I mention there was also bourbon?

The sweetness of a maple glaze is balanced by the salty bacon topping in this Ultimate Bourbon Maple Bacon Chocolate Cake. The bourbon flavor is prominent in the rich chocolate cake. This isn’t your typical spiked cake. The bourbon taste is rather strong in this recipe, but that is what makes it worthwhile in my view!

I’ve been fantasizing about the perfect method to blend a couple of my favorite tastes. When maple and bacon are combined in a dessert, it is always a winner. This cake features a rich brown butter maple icing that is enough for everyone!

The chocolate cake was inspired by my Cabernet Raspberry Chocolate Cake, which started off as a Better Homes and Gardens recipe. I substituted bourbon for the red wine. The cake itself is a little denser and richer than your ordinary cake. This is due to the fact that I used dark chocolate cocoa powder. Dark chocolate has a little bitter flavor that I enjoy, and I believe it complements the bourbon wonderfully. I like how the dense cake is balanced off with the sweet icing.

Simply make the bacon ahead of time and set it aside to cool. My bacon is best cooked in the oven. It’s a lot less dirty than cooking it on the stove. I prefer to use thick sliced maple bacon because, as we all know, maple improves everything. Cut the bacon into tiny pieces and scatter it on top of the glaze. Then devour the remaining bacon. #justsaying.

I know it’s difficult to stick to a diet when there’s cake like this around, but this cake is for a special occasion. Perhaps the Super Bowl? I don’t watch football, but if I had to sit through one, this cake would surely make it more bearable. Don’t you think so?

Ultimate Bourbon Maple Bacon Chocolate Cake

Ingredients

  • 1 1 C Bacon, cooked and chopped
  • 2 C Flour, sifted
  • C Dark chocolate cocoa powdered, sifted
  • 1 tsp Baking powder
  • tsp Salt
  • C Unsalted butter, melted
  • C Vegetable oil
  • 2 C Sugar
  • 5 Large eggs
  • 2 tbsp Vanilla extract
  • C Light sour cream
  • 1 C Bourbon
  • For the glaze:
  • 1 C Powdered sugar, sifted
  • C Unsalted butter (1 stick), browned
  • 2 tbsp Pure maple syrup
  • 2 tbsp Milk

Instructions

  1. Cook the bacon according to the package directions. Allow to cool before breaking the cooked bacon into tiny pieces.
  2. Preheat the oven to 350 degrees Fahrenheit. Instead of flour, grease a bundt cake pan and cover with cocoa powder.
  3. Sift together the flour and cocoa powder in a medium-sized mixing bowl. I normally sift my cocoa powder using a sieve rather than a sifter. Set aside the baking powder and salt.
  4. Melt butter in a microwave-safe bowl. In a mixing basin, combine the melted butter, oil, and sugar. 3 minutes on medium speed, until light and fluffy.
  5. Add the eggs one at a time, making sure each one is fully beaten before adding the next. After you’ve incorporated all of the eggs, mix in the vanilla essence and sour cream.
  6. Alternately add the flour/bourbon mixture. Pour in half of the dry ingredients, beat for 30 seconds, then add half of the bourbon. Repeat with the remaining flour mixture and bourbon.
  7. Pour batter into a greased and floured bundt cake pan. Bake for 45-50 minutes at 350°F. Insert a toothpick into the middle of the cake to check for doneness. Your cake is done when the toothpick comes out clean.
  8. Allow to cool for 30 minutes on a wire rack. Place the wire rack on top of the bundt pan and turn it over after 30 minutes. Tap the sides gently to release the cake. Before flipping the cake, place a piece of parchment paper or a plate over it to prevent it from adhering to the wire rack. If the cake does not release, carefully insert a butter knife down the edge of the pan to assist it release.
  9. For the glaze:
  10. Sift in the powdered sugar. This step is required to get a smooth glazing.
  11. In a saucepan, melt the butter. Continue to whisk after the butter has melted until it has become golden brown.
  12. Melted butter should be poured over powdered sugar. Pour in the maple syrup and milk. Whisk until completely smooth.
  13. Instead of two tablespoons of milk, use one tablespoon for a richer glaze. Alternatively, add more powered sugar. Add more milk to make the glaze thinner.
  14. This following stage is optional and quite difficult. I want my icing to flow down the edges of the cake rather than pool in the center. However, after the cake has been coated, it becomes impossible to move. I have a cake lift, however I recommend moving the cake once it has been glazed using two big knives.
  15. Remove the cake off the platter and place it on a wire rack. To make cleanup easier, place a layer of wax paper underneath the wire rack.Remove with care.
  16. Pour glaze over cake gently. Garnish with bacon slices.
